Seafood Paella

Spanish Seafood Paella great to cook and serve in large cast iron pan

Ingredients
  

  • 1 onion
  • 6 cloves garlic
  • 8 roma tomatoes
  • 3 red bell peppers
  • 1/2 cup sweet peas
  • 4 cups chicken or seafood stock
  • 3 cups short grain rice preferably bomba
  • 1 cup white wine pinot grigio
  • 1 lb shrimp
  • 24 little neck clams
  • 22 mussels
  • kosher salt
  • coarse ground pepper
  • 1 tbsp paprika
  • 1 tsp saffron
  • 1 tbsp lemon juice
  • 1 tsp fresh ground cumin
  • 1/2 cup fresh parsley
  • 1 tbsp olive oil
  • 4 bay leaves

Instructions
 

  • Heat large cast iron pan over medium-high heat
  • combine saffron, lemon, and remaining spices in bowl
  • Dice onions, red peppers, mince garlic, and chop parsley, and Sautee until onions are translucent
  • Add rice and toast on pan
  • Deglaze pan with white wine, and add seasoning mixture
  • Dice tomatoes, and add to mixture
  • Add stock to mixture and bring to a light simmer, and add all seafood
  • Continue to cook for 25-30 minutes, all clams should be open, finish off with peas
