Vegan Sausage & Peppers over Cauliflower Rice

Vegan, gluten-free susage and peppers served over Cauliflower Rice

Ingredients
  

  • 4 Vegan Sausages
  • 2 Green bell pepper
  • 1 Yellow Onion
  • 4 cloves Minced garlic
  • 1 tbsp Oregano
  • 1 tbsp Basil
  • 6 oz Tomato paste
  • 2 tbsp White wine
  • 1 Head of Cauliflower
  • 1/4 tsp Kosher Salt
  • 1/4 tsp Coarse ground pepper
  • 2 tbsp olive oil

Instructions
 

  • Rough chop Cauliflower and pulse in food processor to make rice
  • Long chop peppers and onions, and cut sausage into bite sized pieces
  • Heat pan over medium heat, and sauté peppers, onions, sausage, garlic, and spices with 1 tbsp olive oil
  • Once onions are translucent add white wine, and tomato paste, add salt and pepper to taste
  • Cook cauliflower rice over medium heat for 4-5 minutes, add oregano, basil, salt and pepper to taste
