Vegetarian Tacos

Vegetarian Tacos with avocado mayo

Ingredients
  

Avocado Mayo

  • 1 cup mayo
  • 2 avocado
  • 1 tsp cayenne
  • 1 juice of lime
  • 1 tsp salt
  • 1 tsp pepper

Tacos

  • 1 lb potato
  • 1/3 cup canola
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp mustard powder
  • 1 tbsp paprika
  • 2 tbsp rice vinegar
  • 1 tsp salt
  • 1 tsp pepper
  • 6-8 flour tortilla
  • 2 limes
  • 1 red onion diced
  • 1 chopped lettuce

Instructions
 

Avocado Mayo

  • Smash avocado
  • Mix salt, pepper, cayenne, lime juice and mayo
  • Using electric mixer evenly mix avocado with mayo

Tacos

  • Heat oven to 400 F
  • Cut potatoes into small quarters and place in bowl
  • Coat with oil, and then evenly coat with spices and vinegar
  • Cook for 20 min or until golden brown
  • Heat tortilla, and coat with avocado mayo, fill with red onions lettuce, and potatoes
