Salmon Toast

Cured salmon over toast with a tzatziki sauce

Ingredients
  

Tzatziki

  • 1/4 cup Greek yogurt
  • 1 tsp white vinegar
  • 1/4 cucumber
  • 1/4 tbsp garlic powder
  • 1 tsp extra virgin olive oil
  • 1/4 tsp kosher salt

Cured Salmon

  • 1/2 lb salmon Alaskan, or high grade recommended
  • 4 cup kosher salt
  • dill
  • lemon or lime
  • 1/4 red onion
  • capers optional
  • 4 pieces of toast

Instructions
 

Tzatziki

  • Peel skin from cucumber and grate into a bowl
  • Add the remaining ingredients into bowl and mix evenly

Cured Salmon

  • Remove skin from salmon
  • Take tinfoil and add 2 cups of salt
  • Place salmon in tinfoil and cover completely with remaining salt
  • Leave in fridge for 48 hours until fully cured, and all liquids have been absorbed
  • Thinly slice, and place on toast with tzatziki, diced red onion, dill, and squeezed citrus
