Ingredients
  

Beef Goulash

  • 2 lb short rib
  • 4 large onion
  • 1 tbsp fresh marjoram
  • 1 tbsp ground caraway seeds
  • 4 tbsp high quality paprika (Hungarian or homemade)
  • 6 cayenne peppers
  • 6 bay leaves
  • 6 oz tomato paste
  • 1/2 tbsp white vinegar
  • 2 cup water
  • 3 tbsp beef fat

Nosterl

  • 2 jumbo eggs
  • 1/4 cup whole milk
  • 1 1/2 cup all purpose flour
  • 1/2 tsp kosher salt

Instructions
 

Beef Goulash

  • Brown Short rib for 4-5 mins on medium heat with 1 tbsp of beef fat, and set aside
  • Slice onions, dice cayenne pepper, and add caraway seeds, marjoram. Sautee over medium heat with the remaining beef fat until onions are caramelized
  • Once onions are caramelized add tomato paste and paprika, and mix evenly
  • Add water and vinegar and blend until it is a smooth consistency
  • Return sauce to pan and add beef, simmer for 3 hours until beef pulls apart

Nosterl

  • Whisk all ingredients until consistent texture and no lumps
  • Form small dumplings with hand
  • Boil water with salt and cook for 1-2 minutes
