Seafood Paella
Spanish Seafood Paella great to cook and serve in large cast iron pan
Ingredients
- 1 onion
- 6 cloves garlic
- 8 roma tomatoes
- 3 red bell peppers
- 1/2 cup sweet peas
- 4 cups chicken or seafood stock
- 3 cups short grain rice preferably bomba
- 1 cup white wine pinot grigio
- 1 lb shrimp
- 24 little neck clams
- 22 mussels
- kosher salt
- coarse ground pepper
- 1 tbsp paprika
- 1 tsp saffron
- 1 tbsp lemon juice
- 1 tsp fresh ground cumin
- 1/2 cup fresh parsley
- 1 tbsp olive oil
- 4 bay leaves
Instructions
- Heat large cast iron pan over medium-high heat
- combine saffron, lemon, and remaining spices in bowl
- Dice onions, red peppers, mince garlic, and chop parsley, and Sautee until onions are translucent
- Add rice and toast on pan
- Deglaze pan with white wine, and add seasoning mixture
- Dice tomatoes, and add to mixture
- Add stock to mixture and bring to a light simmer, and add all seafood
- Continue to cook for 25-30 minutes, all clams should be open, finish off with peas
