Date night steak dinner

Steak dinner with mashed potatoes, and asparagus

Ingredients
  

Steak

  • 2 filet mignon
  • 4 cloves minced garlic
  • 8 sprigs thyme
  • 1 stick butter
  • kosher salt
  • coarse ground pepper

Mashed potato

  • 2 lb russet potato
  • 1 stick butter
  • chives

Asparagus

  • asparagus
  • olive oil
  • kosher salt
  • coarse ground pepper

Instructions
 

Steak

  • Heavily salt and pepper steaks, and let sit for a minimum of 8 hrs before cooking
  • Bring steak to room temperature before cooking (30-45 minutes)
  • Heat pan to medium-high heat, and add butter, thyme, garlic, and steak
  • Cook each side of the steak for 5-8 minutes depending on thickness of steak, and continually baste with butter throughout the cooking process

Mashed Potatoes

  • Place cut following the center of the potatoes
  • Boil potatoes for 15 to 20 minutes, rinse with cold water, and remove skin (should come right off)
  • Grate potatoes, melt, butter and mix with a potatoes masher
  • Cut chives, and mix into potatoes

Asparagus

  • Coat asparagus with olive oil, salt, and pepper
  • Cook in oven at 400 F until tender roughly 25-30 minutes
