Chicken Waldorf Salad

Chicken salad with apples, nuts, raisins, and celery great for sandwiches or as is

Ingredients
  

Chicken

  • 1 Large chicken breast
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp mustard powder

Salad

  • 2 medium apples
  • 1/2 cup craisins raisins work as well see notes
  • 2 celery stalks
  • 1/2 cup pecans
  • 1 tbsp olive oil
  • 1 cup grapes

Dressing

  • 1 cup greek yogurt
  • 1/2 cup mayo preferably homemade
  • 2 medium oranges juiced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp lemon juice

Instructions
 

  • Coat chicken with olive oil, salt, pepper, and mustard powder
  • Cook chicken at 350 F for 35-45 minutes until golden brown
  • Roast pecans in pan with olive oil for 3-4 minutes on high heat until lightly toasted
  • Mix all dressing ingredients with electric mixer (mayo, Greek yogurt, orange juice, salt, pepper, and lemon juice)
  • Dice apples, celery, and slice grapes
  • Mix chicken and dressing with electric mixer until chicken is a pulled consistency
  • Fold in all other ingredients by hand until evenly distributed

Craisins can be substituted for : Raisins Recipe
